The other white meat - it's what's for dessert.

Those of us who work at schools don’t have much opportunity to learn new things during the first week of the fall semester. It’s so busy, the best we can hope for is getting through each day. So, I can’t say I learned anything new but I did reaffirm a strongly held belief this week-end. Bacon makes everything taste better.

I hosted a family picnic, which in my family does involve a small amount of showing off. We all like to cook and to eat so you’d better show some effort. The meal turned out well. I was mostly pleased with my mise en place which allowed me to take the meat off the grill to rest while while I brought together three side dishes in about five minutes. Yes, bacon did make a minor appearance in two of these side-dishes but it was the dessert that reaffirmed my faith in bacon – a buttered-rum ice cream with candied bacon.

Bacon, huh??? While it sounds delicious, I wish I could try your 'baconator' recipes, but unfortunately I'm a partial vegetarian who doesn't eat pork, beef, or any other type of meat other than poultry and seafood. I'm sure those dishes were deliciously yummy, though. Keep up the good work!

You are a truly adventurous cook. I am not brave enough to mix things that don't seem to go together...I still have a hard time with ketchup on hot dogs. (Don't really eat hot dogs because I've heard they cause brain tumors), my other concern is that given the generous helping of saturated fat in ice cream, adding bacon is like begging for an angioplasty. I will visit you in the cardiac unit and tell your doctor that it all started at a picnic.

Beth, it's worth noting that we are a cardiac unit sort of family - one death, 2 by-pass, and a heart attack in the past 5 years. All that being said, we each had a scoop to taste so moderation was the name. In truth, the ice cream was the dangerous part. Bacon has a bad reputation since we think of all that rendered fat when we cook it. It has about 1 gram of sat fat for every 8 grams of bacon so they probably ended up with a third of a gram in bacon sat fat, which as we know means zero sat fat in USDA terms.

You are not only adventurous but brave as well with that family history. Before I sound too "health freak" I will admit that I like bacon too. I will only buy the center cut kind (probably makes little difference). I am too lazy to figure out grams of fat so I just eat oatmeal instead. I will probably have a really healthy heart and keel over from a hepatitis A or ecoli infection due to all of the salsa and chips I eat. Remember that tomato scare? Salsa can be dangerous to your health!
